Detailed itinerary
Transport: Uber (it's really affordable here) or tram (you can hop on tram 12 or 28 which will take you around all the major sights in Lisbon)
Stay: Hyatt Regency (this was closer to Belem Tower and Mosteiro dos Jeronimos)
Day 1
Begin the tour of Lisbon, with a stop at the top of Edward VII's Park to enjoy a magnificent view over the hills of Lisbon and the River Tagus. Next, view the treasured 16th century Belém Tower, a monument to Portugal's Age of Discovery, and a UNESCO World Heritage Site. Afterward, visit the ornate Jeronimos Monastery, an impressive symbol of the country's power and wealth and resting place of explorer Vasco da Gama. In the afternoon head to quaint Sintra, the "Glorious Eden" of Lord Byron, and ancient summer retreat of the royal court, highlighted by lavish romantic castles and stunning monuments. Visit the Sintra Royal Palace, a 15th-century royal residence, containing one of the largest tile collections in Portugal. Then, spend some free time in the Village Historical Center before returning to Lisbon.
Day 2
Start the day at the Cristo Rei monument and then you could walk along the shore to Ponto Final Restaurante or head back to main Lisboa for something to eat. If you like museums you might be interested in visiting the MAAT, a contemporary cultural museum, renowned for its striking modern architecture and dynamic exhibitions that explore the intersections of art, technology, and society, otherwise, you can head back to the city center via car or ferry. Rua Cor de Rosa will be your first stop, it's Lisbon's famous picturesque pink street! Then you could walk over to Carmo Convent and if interested head up the Santa Justa Elevator.
I wanted to mention to take out time to try some of the cuisine at either one of the popular markets (like Time Out Market or Mercado de Santa Clara) or if you're craving south asian cuisine for some reason, there are tons of Pakistan / Nepalese restaurants near Rossio Square. I've heard Manteigaria is a great place to buy the famous Portuguese desert pastel de nata, though I forgot to buy this and just bough the generic one from the airport :( Further north from Rossio Square is another famous view point Miradouro Sao Pedro de Alcantara.
Last but definitely not least on the sight seeing list is Castelo de Sao Jorge, perched on a hilltop in Lisbon, it's a historic castle offering panoramic views of the city and the Tagus River. I honestly think although Lisbon's many viewpoints offer their unique perspectives on the city, it's best to pick 2-3, my top two would be the Castelo de Sao Jorge and Santa Justa Elevator. For ease of transport you could also consider trying Tram 12 or 28 they, are highly recommended as their routes touch many points of interest (images below).
To finish off the day, end with a Fado dinner. It's a traditional genre of Portuguese music characterized by its soulful and melancholic melodies, is a cultural emblem of Lisbon, often performed in intimate venues across the city's historic neighborhoods. You can book a restaurant based experience or Fado on a boat, both will definitely be exciting. One of the most popular spots is Lisboa Em Fado.
Day 3
If you're in Lisbon for a third day it might be worth visiting the beach at Costa Da Caparica. You could also consider taking a short day trip to Fatima, Setubal, or Evora.
Restaurant recommendations: SUD Lisboa, Cafeh Tehran, Loco, Ponto Final Restaurante
